Keep up with the meatloaf, Kevin! I discovered the pleasure of a good meatloaf as an adult... mix pork and beef, like Liz said. I use the Cooks' Illustrated recipe that adds panade to keep it from drying out. They have a whole glaze recipe with broth, brown sugar, vinegar, tomato paste... until I realized it's basically ketchup and I just mix a half cup of chicken broth with a half cup of ketchup. Let's not go crazy Cooks', it's still meatloaf.
My goodness do I find your writing delightful. The closest I've every come to KC is Big Charlie's Saloon at 11th and McKean, my buddy's place in Sedalia, MO, and Ozark/Season 4 of Fargo; but my word do you make reading about its food a fun endeavor.

I was the weird kid who didn’t like barbecue sauce, so will always love Gates for understanding and serving me just meat on white bread. Still can remember the texture of the bread (flat from the weight and the heat, but moreish with the absorbed bar-b-q essence). Partial to Bryant’s for the red cream soda though
